They call it the poor man’s asparagus,<\/span>
\n<\/span>the housewife’s bane, the winter spear.<\/span>
\n<\/span>Barons and counts won’t have it near,<\/span>
\n<\/span>so no innkeeper puts it on the menu.<\/span><\/p>\n

With its sandy skin and sticky sap,<\/span>
\n<\/span>most people cannot bear the sight.<\/span>
\n<\/span>It brings the kitchen maids to plight,<\/span>
\n<\/span>though once it’s cooked it’s a tasty bite.<\/span><\/p>\n

Yet I do love salsify,<\/span>
\n<\/span>because I once received some, wrapped in newspaper,<\/span>
\n<\/span>from a market woman who wished to teach me<\/span>
\n<\/span>that every vegetable deserves respect,<\/span>
\n<\/span>though I detest preparing them,<\/span>
